Modern Tortilla is Chef Tom D’Ambrosio’s (Co-Creator of Aioli Gourmet Burger) second project here in the valley. With partner Kyle Hollenbeck and their partner Michael, they grew Aioli Gourmet Burgers from one mobile taco truck to three trucks and a catering company.
Chef Tommy D’Ambrosio is a graduate from the Culinary Institute of America and has over a decade of fine dining experience. He was also crowned Chopped Champion on The Food Network in January of 2019 on the episode Tacos & Tequila! Being born and raised in Arizona, Chef Tommy was happy to come back to his hometown and start, own, and operate one of the fastest growing food truck experiences in Arizona. Chef Tommy has also lead Aioli brand into the winners’ circle of state & national competitions such as Arizona’s Burger Battle, Phoenix Devoured, and Scottsdale Culinary Classic Events. Aioli Gourmet Burgers and Catering started with a food truck and something delicious to deliver; it has now grown into multiple food trucks, fully catered experiences, and a new restaurant located at 32nd Street & Shea in Paradise Valley!
Director of Sales
Kyle is a founding member and Director of Sales for Aioli Gourmet Burgers. Growing up with the other two partners in the Shadow Mountain area was a big reason Kyle wanted to have the first Aioli Burgers location near the school. He will help work with you on any food truck or catering bookings, and you will see him around the restaurant as he works out of there. Kyle wants to always make sure you have the best experience when dining with us and/or having us cater your special event.
Chef Aaron Brown prepares and ensures that all of our events go off without a hitch along with his team. He is always ready for a challenge and finds the positive in every situation. Chef Aaron studied under Chef Rene Berard, Maitre-Cuisinier de France in Provence, France and since then has worked in high volume kitchens throughout the states. Before he joined our team, he was the Executive Chef of LSG Sky Chefs here in Phoenix.
Event Sales Manager
Vivianna D’Ambrosio was born and raised in a large Italian family in Westchester, New York. She started cooking with her grand mother in the kitchen at a very young age which sparked her passion for food and cooking. After graduating from The Culinary Institute of America she worked at The Greenbrier, Americas Resort in White Sulphur Springs, West Virginia under some of the most talented chefs but she soon realized that she had a deeper passion for front of house operations. She moved to Arizona with her husband Tom D’Ambrosio and continued to work at resorts in the valley which eventually led her into event planning and sales. She is excited and eager to create your next food truck event!
Paola is the Administrative Assistant for Aioli Gourmet Burgers. Her position encompasses everything from human resources to customer service. She personally makes sure that each client’s expectations have been met with each event. She is a native New Yorker who has recently moved to Arizona to live near her daughter and son-in-law.
Market and Sales Eve
Mary Davisson is an Arizona native, raised in Fountain Hills, AZ. She knew at a young age that hospitality was in her blood. After graduating from high school, Mary attended Northern Arizona University, where she received her degree in Hotel and Restaurant Management. She focused her efforts on the event planning and coordination side of the industry. For the last seven years, Mary has had the privilege of coordinating corporate and social events, for restaurants, venues, and hotels, including retreats, conferences, and weddings. Right now, she is living in Phoenix with her fiancé and two pups. Mary is eager to help you coordinator your next event with Modern Tortilla!!
