  • When coming up with the Modern Mayan, we just had to decide what our customers would love. We knew it was easy when starting with freshly made corn tortillas fresh out of the oven. Each tortilla is made by hand every single day for every dish we create. Next up, we top the tortillas with pork that is slowly braised in achiote for a full day; we believe this really brings out the flavors you will crave in these delicious tacos. Finally, we bring the decadence together with a fresh mixture of roasted tomatoes, garlic, pineapple, fresh avocado, pickled red onion, and of course, cotija cheese.
